  • Cinnamon Pecan Scones

    Ingredients

    • 3 c. King Arthur Unbleached All-Purpose Flour
    • 1 Tbsp. baking pwdr
    • 1 tsp salt
    • 1/2 c. sugar
    • 1 c. pecan meal
    • 1/2 c. minced pecans
    • 1/2 c. cinnamon chips*
    • 1/2 c. butter or possibly margarine
    • 3/4 c. buttermilk
    • 2 lrg Large eggs
    • 2 tsp vanilla or possibly 1/4 tsp. butter-vanilla flavor pwdr*

    Directions

    1. In a medium-sized mixing bowl, whisk together the flour, baking pwdr, salt, sugar, pecan meal, pecans and cinnamon chips. Cut in the butter or possibly margarine till the mix resembles coarse cornmeal, with a few larger chunks of butter still showing. In a separate bowl, beat together the buttermilk, Large eggs and vanilla. Pour the wet ingredients over the dry ingredients, and stir to combine.
    2. Scrape the dough out onto a lightly floured work surface and knead it gently just till it holds together. Pat it into a rectangle about 8 x 10 inches, and cut the dough into 2- to 3-inch diamonds or possibly squares with a sharp knife. Place the scones on an ungreased cookie sheet, and bake in a preheated 400F oven for 12 to 14 min, till they're golden. Remove them from the oven, and serve hot.
    3. Yield: apprximately fifteen 3 1/2-inch scones

    5. NOTES : These scones, rich with the flavor of pecans and studded with sweet, spicy cinnamon chips, are like which certain brand of potato chips, of that it's claimed you cannot eat just one.
