  • Cinnamon Coffee Scones

    Ingredients

    • 2 c. Self-rising flour
    • 2 tsp Cinnamon
    • 6 Tbsp. Sugar
    • 1 1/2 stk unsalted butter, (3/4 c.)
    • 2 x Large eggs
    • 1/4 c. Strong brewed Folgers Coffee
    • 1/4 c. Lowfat milk
    • 1/2 c. Golden brown raisins, (or possibly minced dry apricots)
    • 1/2 c. Minced pecans, (or possibly walnuts) Extra lowfat milk and sugar for toppings

    Directions

    1. Stir together the flour, cinnamon and sugar. Cut the butter into Tbsp. pcs and blend (with a pastry blender or possibly two knives) into the dry mix. (Butter pcs should be the size of small peas). Mix together the Large eggs, coffee and lowfat milk. Stir into the dry mix to create a soft dough. Stir in the fruit and nuts. Turn out onto a floured board and gently pat into a circle of dough about 1/2" thick. Cut out rounds with a floured biscuit cutter and place them on a greased baking sheet. Gently brush tops with lowfat milk and bake in a preheated 400 F. oven for 12-15 min or possibly till golden. Serve warm. 12 Large Scones
