  • CINNAMON CHIP BANANA MUFFINS

    Ingredients

    • 3 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon ground nutmeg
    • 1 1/2 sticks butter or 12 tablespoons (softened)
    • 3/4 cup white granulated sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 1/4 cups buttermilk
    • 2 cups cinnamon chips

    Directions

    Cinnamon chip banana muffins are so good. Make these cinnamon chip banana muffins with overripe bananas you have on hand for a real breakfast treat.  I made these muffins using my recipe for my homemade cinnamon chips that I had frozen and needed to use.  You can also use cinnamon chips you buy at the store but I always have a hard time finding them and so I make my own and freeze what I have leftover from a recipe.  You might also like to check out our recipe for our best ever cinnamon bread that gets wonderful reviews. Cinnamon chip banana muffins are so delicious with coffee and one of our favorite cinnamon recipes. 3 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon ground nutmeg 1 1/2 sticks butter or 12 tablespoons, softened 3/4 cup white granulated sugar 2 eggs 1 teaspoon vanilla extract 1 1/4 cups buttermilk 2 cups cinnamon chips Whisk together the flour, baking powder, baking soda, salt and ground nutmeg in a bowl.  Cream the butter, sugar and eggs using a mixer.  Add vanilla extract, flour mixture and buttermilk and  continue mixing until all ingredients are wet.  Fold cinnamon chips in with a spoon.  (You can dredge cinnamon chips in a little flour if you are afraid they will sink to the bottom).  Spray a 12 cup muffin pan with cooking spray, fill 1/2 to 3/4 full and bake in preheated 350 degree oven for 35 minutes until golden brown on top.  Makes 18 muffins.  Enjoy!
