  • Cinnamon Basil Whole Wheat Peach Bread

    Ingredients

    • 1 c. all-purpose flour
    • 1 T baking pwdr
    • 1/2 teaspoon salt
    • 1/2 teaspoon grnd cinnamon
    • 1 c. whole wheat flour
    • 1/2 c. minced nuts
    • 2 T fresh cinnamon basil
    • 1 c. lowfat milk
    • 1/4 c. vegetable oil
    • 1 egg
    • 1 teaspoon peach extract
    • 1/3 c. packed brown sugar
    • 1/2 c. mashed fresh peaches

    Directions

    1. Preheat oven to 375. Sift together flour, baking pwdr, salt and cinnamon in a large bowl. Stir in whole wheat flour, brown sugar and nuts. Mix well. Make a well in the center and set mix aside.In medium bowl, mix mashed peaches, lowfat milk, oil, egg and peach extract and whisk till blended. Add in to dry ingredients, pouring into the well. Stir just till dry ingredients are moistened. Mix in cinnamon basil. Pour mix into 3 greased and lightly floured loaf pans (5 1/2 x 3 x 2). Bake at 375 for 25-30 min. Cool pans on rack for 10 min then remove bread from pan. Cool bread on racks.
