  • Cinnamon Apple Oven Pancake

    Ingredients

    • 1/4 c. butter or possibly margarine
    • 1 c. all-purpose flour
    • 2 c. lowfat milk
    • 3 x Large eggs
    • 1/2 tsp salt
    • 2 Tbsp. butter or possibly margarine
    • 2 tsp cornstarch
    • 1 Tbsp. cool water
    • 1/3 c. packed brown sugar
    • 1/2 tsp cinnamon
    • 2 med apples cored, sliced

    Directions

    1. Heat oven to 400 . In 9 x 13 baking pan, heat 1/4 c. butter in oven (5 to 6 min). In small bowl combine all other pancake ingredients.
    2. Beat at low speed, scraping bowl often, till well mixed (1 to 2 min).
    3. Pour melted butter into batter; continue beating till well mixed. Pour batter into warm pan. Bake for 30 to 40 min or possibly till puffed, set in center and golden. Meanwhile in 10 inch skillet heat 2 Tbsp. butter. In small bowl stir together cornstarch and water. Stir brown sugar, cinnamon and cornstarch mix into butter. Cook over medium heat, stirring constantly, till sugar dissolves and mix bubbles and thickens (2 to 3 min). Stir in apples. Continue cooking, stirring constantly, till apples are proportionately coated and crisply tender (10 to 12 min). Spoon filling over warm pancake; serve immediately.
