cindys quick and easy breakfast hash
scrumptious breakfast all in one Ingredients
- new jersey sweet potatoes,or red ones
- 1 red pepper
- 1 green pepper
- 1/2 purple onion
- cooked turkey meat or ham cubed
- 8 eggs
- pinch salt,pepper
- 3 pinches of fresh french terragon
- 2 pinches parm cheese
Directions
- 6 sweet potatoes,new jersey I prefer,but any kind will do
- thinnly sliced,cooked slightly in microwave,ahead of time
- chop onion,peppers,saute till tender,in a little olive oil
- add about 2 cups chopped turkey or ham,little salt,pepper,fresh or dried terragon,pinch of parm cheese,then add potatoes cooking till slightly golden,then add the eggs and scramble till cooked
- serve with some fresh fruit/greek yougart and whole wheat toast
