  • Cider Glazed Mini Apple Muffins

    Ingredients

    • 1/4 c. Walnuts
    • 1/2 x Granny Smith or possibly Golden brown Delicious apple
    • 1 c. All-purpose flour
    • 1 1/2 tsp Baking pwdr
    • 1/2 tsp Cinnamon
    • 1/4 tsp Salt
    • 3 Tbsp. Unsalted butter
    • 1/4 c. Packed brown sugar
    • 2 Tbsp. Unpasteurized apple cider
    • 1 lrg Egg For cider glaze
    • 2 c. Unpasteurized apple cider
    • 2 Tbsp. Granulated sugar

    Directions

    1. Preheat oven to 400 degrees F. and grease twelve 1/8-c. mini-muffin c. (about 1 3/4 inches across top and 3/4-inch deep).
    2. Lightly toast walnuts and chop fine. Core and peel apple and cut into 1/4-inch dice. Into a bowl sift together flour, baking pwdr, cinnamon, and salt. In a saucepan heat butter and stir in brown sugar. Remove pan from heat. Whisk cider and egg into butter mix till smooth and add in to flour mix, stirring till combined well.
    3. Stir in walnuts and apple. Divide batter among muffin c. and bake 15 min, or possibly till golden brown.
    4. Make glaze while muffins are baking:In a 2-qt saucepan boil cider 15 min, or possibly till reduced to about 1/2 c., and pour through a sieve lined with 4 layers of cheesecloth to remove sediment. Return cider to cleaned pan and add in sugar. Simmer mix, stirring, till syrupy, about 5 min.
    5. While muffins are still hot, with a wooden pick make several holes in top of each muffin. Brush hot glaze over muffins several times till absorbed.
    6. Yield: 12 mini-muffins
