    Ciamelli are like bagels and have a pleasant taste of anise with a burst of orange. They are of Italian origin, a solid bread, and a great favorite at holidays, especially at Christmas & New Years. In our family they were used as "dunkers"; dunk in wine, cocoa, or coffee. They brought smiles to our faces. Many of those who migrated from Italy are gone now, and the tradition has fallen. However, there are still a few of us who were able to keep the recipes and make them today. A good thing about them, they are used in making sandwiches, very tasty and chewy. Enjoy them

    Ingredients

    • 3 pkg. dry yeast
    • 1/2 C. sugar
    • 1 C. warm liquid ( milk or water) to dissolve yeast.
    • 4-5 C. flour
    • 1/2 C. shortening
    • 1/2 tsp. salt
    • 3 tsp. anise seeds
    • 1/2 C. (melted) frozen concentrated orange juice
    • 1/4 C. instant potatoes ( optional)

    Directions

    1. 1. In mixing bowl, dissolve yeast with sugar in warm liquid,. Mix until foamy. Add orange juice.
    2. 2. Blend together salt, shortening, anise seeds and add to the bowl.
    3. 3. Add the flour slowly and knead until smooth.
    4. 4. Knead dough on floured board, and work it until smooth. You may need to add a little flour.
    5. 5. Cover the dough with a large bowl and let set for about 15 minutes.
    6. 6. On floured board, knead the dough again and cover and let set for 15 more minutes.
    7. 7. Now knead the dough and form into a log. Slice 1" pieces from the log.
    8. 8. Roll each into a smaller "log"; press ends to form a ring.( Wet ends will help hold it together)
    9. 9. In large pan of boiling water, drop the formed Ciamelli a few at a time. They will come to the surface in a couple of minutes: : turn them over and let cook for 2 minutes.
    10. 10 As they come out of the water, place them on floured towel to cool for 15 minutes.
    11. 11. Preheat oven to 350 degree. On cookie sheet, bake Ciamelli for about 20 minutes. When they start to brown, further bake them on oven rack about 15 minutes
