  • Chunky Pork And Sausage Chili

    Ingredients

    • 1 lb lean pork boneless loin cut into 3/4-inch pcs
    • 1/2 lb fully cooked smoked beef sausage cut into 1/2-inch slices
    • 1 lrg onion minced (1 c.)
    • 2 med stalks celery sliced (1 c.)
    • 2 x cloves garlic finely minced
    • 1 x 15 oz can black beans rinsed and liquid removed
    • 1 x 15 oz can chunky tomato sauce
    • 1 x 10 oz can diced tomatoes and green chilies
    • 1 c. water
    • 1 1/2 tsp chili pwdr
    • 1/2 tsp grnd cumin
    • 1/2 tsp salt
    • 1/4 tsp pepper

    Directions

    1. Mix all ingredients in 3 1/2- to 6-qt slow cooker.
    2. Cover and cook on low heat setting 8 to 10 hrs (or possibly high heat setting 3 to 5 hrs) or possibly till pork is tender.
    3. 6 servings.
    4. Substitution: For a "red and white" chili, leave out the sausage and use 2 pounds of pork Add in a can of great northern or possibly pinto beans instead of the black beans.
    5. Special Touch: Let everyone add in his or possibly her own special touch by passing bowls of shredded Cheddar cheese, minced avocado, sliced jalapeno chilies, minced onion, sliced ripe olives, minced fresh cilantro and lowfat sour cream.
    6. Serving Ideas : Decide at the last minute to invite friends over for chili Stir in an extra can or possibly two of your favoritebeans.
