Chunky Coconut, Tomato, Cucumber And Lime Relish
Ingredients
- 8 x Cherry tomatoes, quartered or possibly roughly minced
- 1/2 x Fresh coconut, grated or possibly shaved
- 1 sm Hand basil, roughly minced
- 15 x Cm cucumber, skinned, seeds removed and roughly minced
- 1 Tbsp. Extra virgin olive oil Salt and freshly grnd black pepper
- 1 x Limes, juice of (1 to 2)
Directions
- 1 Put the tomatoes, coconut, basil and cucumber into a bowl and toss.
- Just before serving, toss in the extra virgin olive oil, salt, pepper and lime juice to taste.
