    This is fast and easy, you can make it using left over fried baked or boiled chicken. We like to use it as a dip for crackers, Great recipe for lunch. This fits in with diabetic recipes..

    Ingredients

    • 4 chicken breasts
    • bunch green onions
    • celery stalk
    • mayonaise
    • salt and pepper

    Directions

    1. boil, bake or fry breasts and cut into 1/2 inch cubes, place in large bowl. Use the green of the onion,chopping into about 1/4 inch pieces. Chop the celery stalk into small pieces,place onion and celery into same bowl as chicken. Spoon mayonaise by tablespoon, mixing into bowl until desired thickness, salt and pepper to taste, Refrigerate until chilled, serve on bread as sandwich, or use as a dip with crackers.
