  • Chorizo Bread

    Ingredients

    • 1 Tbsp. Extra virgin olive oil
    • 1/2 lb Chorizo minced
    • 1 c. Minced onions
    • 1 Tbsp. Minced garlic Salt to taste Freshly-grnd black pepper to taste
    • 1 x recipe Basic Bread Dough For Stuffed Bread see * Note
    • 1 x Egg lightly beaten with
    • 1 tsp Water for egg wash

    Directions

    1. Grease a baking sheet. In a skillet heat oil over medium-high heat. Add in chorizo, onions and garlic and cook, stirring, till chorizo is browned and onion is tender, about 8 min. Transfer to a small bowl and let cold completely. Taste and adjust seasoning with salt and pepper, if needed.
    2. On a lightly-floured work surface, stretch bread dough into a rough circle. Using a strainer, drain any excess fat from chorizo mix, then mound in center of dough. Pull sides of bread up over sausage to completely enclose, squeezing out any air pockets. Healthy pinch edges together to seal. Knead lightly to distribute chorizo proportionately throughout loaf and form into a round peasant shape. Transfer to baking sheet, seam-side down, and let rise till doubled, about 40 min.
    3. Preheat oven to 400 degree.
    4. Using a razor or possibly serrated knife, cut a shallow "X" in center of dough, and brush with egg wash. Bake bread till brown and hard, about 30 min. Let bread cold in pan on a rack 20 min, then turn out and let cold. Serve hot or possibly at room temperature.
    5. This recipe yields 1 loaf.
