Chocolate Zucchini Cake

This is such a moist and delicious cake. With orange zest in the cake and frosting, it adds an extra element of goodness! You'll never know there is zucchini in this cake either.

Ingredients

  • Cake:
  • 2 c. grated zucchini
  • 1/2 tsp. salt
  • 1 c. flour
  • 1/3 c. cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 eggs
  • 1 c. sugar
  • 1 Tbsp. orange zest
  • 3/4 c. oil
  • Frosting:
  • 2 c. powdered sugar
  • 1/4 c. softened butter
  • 2 Tbsp. orange juice
  • 1 tsp orange zest

Directions

  1. Preheat the oven to 350.
  2. Grease a 9x13 pan.
  3. Place grated zucchini in a colander to drain.
  4. Sprinkle salt on it.
  5. Mix flour, cocoa, soda, and cinnamon.
  6. Mix (in a seperate bowl) eggs, sugar, orange zest together.
  7. Add oil.
  8. Combine dry with moist ingredients.
  9. Press down on the zucchini with paper towels to extract all moisture.
  10. Stir zucchini into batter.
  11. Pour into the pan and bake for 20-25 min.
  12. For the frosting:
  13. Mix all together and spread on the cooled cake.
