    What do you get when you take your love for chocolate, your fondness for waffles and a breakfast theme for the recipes this month? Well. . . . . if your mind works like mine (and believe me I am sorry for you if it does) you make a batch of chocolate waffles and you try really really hard not to eat them all yourself! I modified a basic waffle recipe, adding cocoa and semi-sweet chocolate chips. Delicious. The waffle was not overly sweet and the addition of the chocolate chips added to the richness of the batter, but did not make them too sweet. You could top these with a variety of toppings depending on what occasion you are making them for. They would be wonderful with bananas and walnuts with maybe a light syrup or do like I did and top them with either whipped cream or powdered sugar. Both were wonderful on a warm waffle.

    Ingredients

    • 1¾ cups all-purpose flour
    • 2 teaspoon baking powder
    • ½ teaspoon salt
    • 1 tablespoon granulated sugar
    • 3 eggs
    • 1¾ cups milk
    • ½ cup vegtable oil
    • 1/2 cup cocoa
    • 1/2 cup semi sweet chocolate chips

    Directions

    1. Mix all the ingredients together except the chocolate chips. Fold those into the batter after it has been thoroughly mixed. Prepare your waffle iron by preheating and spraying with cooking spray if necessary. Ladle the appropriate amount of batter onto the waffle iron and cook according to your specific waffle iron directions. Makes approxiately 6 large waffles.
