Chocolate Trail Mix Peanut Butter Bars

This is another one of those quick desserts that uses a boxed cake mix as a base.The original recipe, Buckeye Bars, called for peanuts. I used what I had on hand - Planters seed, nut, and raisin mix.The creamy peanut butter center wrapped in a nutty, crunchy outer layer is a perfect contrast.

Ingredients

  • 1 (18.25 ounce) box super moist devil's food cake mix
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup chopped Trail Mix
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup peanut butter

Directions

  1. Heat oven to 350 degrees F (325 degrees F for a glass dish).
  2. Grease bottom 13 x 9 baking pan.
  3. Place trail mix in a food processor and pulse until mix is chopped.
  4. In large mixing bowl, combine cake mix, oil and egg; beat on medium speed until crumbly.
  5. Stir in chopped trail mix.
  6. Reserving 1 1/2 cups crumb mixture, press remainder on bottom of the prepared baking pan.
  7. In a medium bowl beat condensed milk and peanut butter until smooth.
  8. Spread peanut butter mixture over prepared crust. I used a spatula, sprayed with cooking spray.
  9. Sprinkle with reserved cake mixture.
  10. Bake 25 to 30 minutes or until just set.
  11. Cool. Cut into bars.
  12. Store loosely covered at room temperature.
