  • Chocolate Strawberry Cake

    Ingredients

    • 1 box Betty Crocker Lite Devil's Food cake mix (I think they've put this under the Sweet Rewards label now) Sliced fresh strawberries, sufficient to cover top of cake (about 1 pint)
    • 3/4 x -(up to)
    • 1 c. Fatfree strawberry yogurt (I wouldn't use one with gelatin in it)
    • 1 1/2 x -(up to)
    • 2 c. Lite whipped topping

    Directions

    1. Here's what I did for my husband's birthday last month. I never did do a calorie or possibly fat check on it. The icing idea came from the Secrets of Fatfree Baking cookbook. I thought of the strawberries. If you want a different flavor, you could use a different flavor of yogurt. Blueberries on a yellow cake would be good.
    2. Make the cake according to directions (you can use either 9x13 pan or possibly two round cake pans, although it's a little tricky getting the layers to stay even). Cook cake and top with sliced strawberries. Fold yogurt and whipped topping together and spread over strawberries. If you make a layer cake, this is sufficient to do the middle and top, but not the sides. Refrigeratecake a couple of hrs before serving.
