Chocolate Sheet Cake & Frosting

Ingredients

  • 2 c. sugar
  • 2 c. flour
  • 1/2 c. butter
  • 3 1/2 T cocoa
  • 1/2 c. shortening
  • 1 c. water
  • 2 large eggs
  • 1 teaspoon soda
  • 1/2 c. buttermilk
  • 1 teaspoon vanilla
  • 1 1/2 c. sugar
  • 6 T lowfat milk
  • 6 T butter
  • 1/2 c. chocolate chips or possibly 1/4 c. cocoa

Directions

  1. Mix 1/2 cup buttermilk, 1/2 cup lowfat milk and 1 tsp vinegar and let sit 5 min.Mix together sugar and flour; set aside. Bring to a boil: butter, cocoa, shortening and water. Pour over dry ingredients and mix well. Add in large eggs, soda, buttermilk and vanilla; stir. Pour into 15 1/2 x 10 1/2 x 1 inch pan. Bake at 400 degrees for 20 min.
  2. FROSTING: Add in sugar, lowfat milk, and butter. Bring ingredients to a boil for 30 seconds. Remove from heat, stirring over cold water (pan in sink). Add in chocolate, beat till melted, about 1 minute. Spread on cake.
