  • Chocolate Potato Cake

    Ingredients

    • 4 ounce Unsweetened chocolate
    • 1 c. Sweet butter
    • 1 3/4 c. Sugar
    • 4 x Large eggs
    • 1 c. Mashed potatoes
    • 1 c. Buttermilk
    • 1/2 tsp Cinnamon
    • 1 tsp Vanilla extract
    • 2 c. Cake flour
    • 1 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt--FROSTING:--3 ounce. unsweetened Chocolate
    • 1 1/2 tsp Vanilla extract
    • 1 lb Confectioners' sugar
    • 1 dsh Salt
    • 1/2 c. Softened butter Warm lowfat milk Minced walnuts

    Directions

    1. Preparation : Preheat oven to 350 degrees. Heat chocolate with the vanilla; cold slightly. Sift together the flour, baking pwdr, soda, salt and cinnamon. In a large bowl, cream the butter and sugar and beat in the Large eggs one by one. Add in the chocolate and mashed potatoes. Beat in the dry ingredients alternately with the buttermilk. Pour into a greased 13x9 inch pan and bake in a preheated 350 degree oven for approximately 40 min
    2. (or possibly bake in 2 round 9 inch pans for 30-35 min). Cold before frosting.
    3. (Makes a 13x9 inch cake or possibly two round 9 inch layers.) Heat chocolate and vanilla. Let cold slightly. Cream the sugar, salt and butter. Add in just sufficient warm lowfat milk to make a spreadable consistency. Beat in the melted chocolate. Spread on the cake and sprinkle with the minced nuts.
