  • Chocolate Pie

    Chocolate Pie

    I LOVE making pies, crusts are easily made by me, I never measured, I just knew a handful of Crisco and 3 handfuls of flour then a few ounces of ice cold water until the dough comes together.

    Ingredients

    • 4 large eggs
    • 1 Cup granulated sugar
    • 1/4 Cup corn starch
    • 2 1/2 Cup half and half
    • 1 Tbs butter
    • 2 Tsp vanilla
    • 4 Ounces unsweetened chocolate (Hershey dry)
    • 1/4 Cup mini semi-sweet chocolate chips

    Directions

    1. Separate eggs, placing whites in a clean metal bowl and set aside yolks, place vanilla and butter into the yolks
    2. In a heavy sauce pan place milk, sugar, cornstarch, and dry chocolate over medium heat. Simmer, stirring constantly, when it begins to thicken and bubble, set timer for 2 minutes lower heat and continue to stir. Add a bit of this mixture into the yolk mixture and temper. Then pour the into the filling mix. Cook an additional 2 minutes. Place mini chips into bottom of crust and the mixture into a prepared cooked pie crust.
    3. Get the egg whites and begin beating them, add 1/4 tsp cream of tartar and continue beating, sprinkle 3 tablespoon sugar as you blend. Beat the egg whites until they become stiff peaks, Top pie filling with meringue and place in 375 oven, bake until golden brown, 12-15 minutes. Serve
