    Chocolate layered Vanilla Cake covered with fondant snowman

    Zoya turned two this week and on her demand I baked a cake for her to cut at 12 midnight! This was the first time I was working with fondant icing and had no tools to make the toys and lay them on the cake but I managed to get a decent cake on the table. Zoya loved the cake and couldn't take her hands off it! It was such a satisfying moment!

    Ingredients

    • Cake-
    • 1 cup All Purpose flour/ Maida
    • 1 tsp Baking Powder
    • 1 tsp Baking Soda
    • 2 large eggs
    • 3/4 cup Granulated sugar
    • 1/2 cup oil
    • 1/2 cup Milk
    • 1 tbsp Vanilla essence
    • For chocolate layering-
    • 300 gm dark cooking chocolate
    • 1/2 cup cream
    • For fondant-
    • 400 gm 10 X Icing sugar +75 gm for rolling the dough
    • 1 tbsp Gelatin
    • 1/4 cup cold water
    • 1/2 cup sugar syrup (Boil 1 cup sugar with 1/3 cup water until syrupy)
    • 1.5 tbsp glycerin
    • 1 tbsp vegetable shortening or Clarified butter

    Directions

    1. For making Fondant-
    2. Dissolve gelatin with water and let it sit for 2 min. It will absorb all the water.
    3. Heat it in a pan or microwave for 30 sec so that the gelatin starts dissolving.
    4. Add sugar syrup and glycerin. Mix well. Heat it in microwave for additional 45 sec such that the solution starts looking clearer.
    5. In a big bowl put 400 gm icing sugar and make a well in the center. Put the sugar solution in the middle and incorporate the icing sugar into the solution. mix well and knead it like a dough. Use vegetable shortening to grease your hands if it gets too sticky.
    6. When the dough is soft and pliable, color parts of it in different colors using gel colors drop by drop and kneading it in the dough.
    7. I used yellow and green color to make two batches. I also left a portion of white fondant for the snow man.
    8. To make cake-
    9. Beat sugar, egg., milk and oil together for 5 min.
    10. Mix All Purpose Flour, baking powder, baking soda together to form dry mix.
    11. Slowly start incorporating the dry mix to sugar egg mix. (Mix in three turns and stir well before beating)
    12. Beat well.
    13. Add Vanilla essence and mix well.
    14. Bake it at 350 F in a square dish for 35 min or until a knife inserted in the cake comes out clean.
    15. Let it cool.
    16. For Chocolate layering-
    17. Melt chocolate in a microwave or a double boiler. Make sure the chocolate doesn't burn if melting in microwave.(Stir it intermittently).
    18. Beat cream in a bowl and mix with the hot chocolate such that it has a smooth creamy texture without any lumps. If needed, you can heat it for 30 sec.
    19. To layer the cake-
    20. When the cake is cool cut the cake horizontally into three pieces. Place the first layer on a flat surface. Pour 1/2 of the chocolate mix on the top and spread well.
    21. Put the second cake layer on it.
    22. Again layer with the remaining chocolate mix and spread well.
    23. Put the third cake layer on the top. Let it rest.
    24. For icing with fondant-
    25. Roll the green fondant and cover the cake.Trim all the extra fondant from the sides.
    26. Roll yellow fondant.Cut human figures or shape of your desire with a cookie cutter and place it on the sides of the cake by lightly brushing it with water such that it sticks to the cake.
    27. Cut stars in the yellow fondant, brush with water and place it on top of the cake.
    28. With the help of white fondant roll out balls and make a snow man
    29. out of it. Place on the cake.
    30. Put chocolate covered Almonds on the stars.
    31. Decorate with strawberries.
    32. Drizzle head of snowman with chocolate to make its hair.
    33. Decorate as per your desire.
    34. Cover the cake and let it rest for 15 min.
    35. Cut and serve.
