  • Chocolate Glazed Bailey's Cheesecake

    Ingredients

    • 6 x Graham crackers, (whole)
    • 1/4 c. Unsalted butter, melted
    • 24 ounce Cream cheese, room temp.
    • 7 Tbsp. Sugar
    • 1 Tbsp. Flour
    • 2 lrg Large eggs
    • 1/4 c. + 2 tbsp lowfat sour cream
    • 1/4 c. + 2 tbsp Bailey's Original - Irish Cream
    • 1 tsp Vanilla extract
    • 1/2 c. Whipping cream
    • 9 ounce Semisweet chocolate, minced Chocolate curls, optional

    Directions

    1. FOR CRUST: Preheat oven to 350. Finely grind graham crackers in processor.
    2. Add in butter and blend till combined. Press crust mix onto bottom (not sides) of 9-inch diameter springform pan. Bake crust till golden, about 8 minutes. Transfer crust to rack. Maintain oven temperature.
    3. FOR FILLING: Using electric mixer, beat cream cheese and sugar in large bowl till smooth. Beat in flour. Add in Large eggs 1 at a time, beating just till combined. Fold in remaining ingredients. Pour filling into crust (cake won't fill pan). Bake 10 minutes.. Reduce oven temp. to 250. Bake cheesecake till set, about 40 minutes. longer. cold cake in pan on rack 10 minutes. Run sharp knife around pan sides to loosen cake. Cold. Refrigerateovernight.
    4. FOR GLAZE: Bring cream to simmer in heavy med. saucepan. Reduce heat to low. Add in minced chocolate and stir till melted and smooth. Cold glaze to lukewarm. Release pan sides from cheesecake. Place cheesecake on rack set over baking sheet. Pour glaze over cheesecake, spreading w/spatula to cover top and sides and allowing excess to drip onto sheet. Chill till glaze sets, about 30 minutes. (Can be prepared 1 day ahead. Cover and chill.) Transfer cheesecake to platter. Garnish w/ chocolate curls if you like.
