    Chocolate Cupcakes with ganache

    These are dark and chocolatey with a moist crumb and a lovely creamy glossy ganache on top.

    Ingredients

    • Cupcakes
    • 1/2 cup cocoa powder
    • 1 cup flour
    • 1 cup sugar
    • 1 teaspoons baking soda
    • 1/2 teaspoon baking powder
    • 1 large egg
    • 1/2 cup milk
    • 2 tablespoons oil
    • 1 teaspoon pure vanilla extract
    • Ganache
    • 120gms or 4 oz Dark chocolate
    • 1/2 cup heavy cream

    Directions

    1. Preheat oven to 180 C .Line a muffin pan of 12 with liners.
    2. Sift cocoa, flour, baking soda, baking powder, into the bowl of a mixer. Beat on low speed until just combined.Add Sugar.
    3. Raise speed to medium, and add eggs, milk,oil and vanilla. Beat until smooth, about 3 minutes.
    4. Divide batter among baking cups, filling each about two-thirds full.
    5. Bake until tops spring back when touched with a finger, 18 to 20 minutes. Let it cool completely.
    6. Dip the cupcakes in ganache 2-3 times ,dry between the coats.
    7. Ganache
    8. Coarsely chop chocolate.
    9. Bring cream just to a boil over medium heat. Pour over chocolate . Let it stand for 10 minutes .
    10. Stir with a whisk until smooth and shiny to break up any pieces and emulsify cream and chocolate.
