Chocolate Cupcakes with ganache

- Cupcakes
- 1/2 cup cocoa powder
- 1 cup flour
- 1 cup sugar
- 1 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 large egg
- 1/2 cup milk
- 2 tablespoons oil
- 1 teaspoon pure vanilla extract
- Ganache
- 120gms or 4 oz Dark chocolate
- 1/2 cup heavy cream
Directions
- Preheat oven to 180 C .Line a muffin pan of 12 with liners.
- Sift cocoa, flour, baking soda, baking powder, into the bowl of a mixer. Beat on low speed until just combined.Add Sugar.
- Raise speed to medium, and add eggs, milk,oil and vanilla. Beat until smooth, about 3 minutes.
- Divide batter among baking cups, filling each about two-thirds full.
- Bake until tops spring back when touched with a finger, 18 to 20 minutes. Let it cool completely.
- Dip the cupcakes in ganache 2-3 times ,dry between the coats.
- Ganache
- Coarsely chop chocolate.
- Bring cream just to a boil over medium heat. Pour over chocolate . Let it stand for 10 minutes .
- Stir with a whisk until smooth and shiny to break up any pieces and emulsify cream and chocolate.
