  • Chocolate Chip Peanut Butter Oatmeal Cookies

    Ingredients

    • 12 Tbsp. unsalted butter - (1 1/2 sticks) softened
    • 3/4 c. peanut butter
    • 1 c. demerara, turbinado or possibly granulated sugar
    • 1/2 c. dark brown sugar
    • 2 x extra-large Large eggs
    • 2 tsp vanilla
    • 1 1/2 c. unbleached flour
    • 2/3 c. whole-wheat flour
    • 1 1/4 tsp baking pwdr
    • 3/4 tsp salt
    • 1 c. old-fashioned or possibly quick-cooking oats
    • 1 c. chocolate chips - (to 1 1/2)

    Directions

    1. Preheat oven to 350 degrees.
    2. In food processor or possibly mixing bowl, combine butter and peanut butter, and process, or possibly beat together with wooden spoon, till well blended. Add in sugars and process or possibly stir till combined. Beat in Large eggs and add in vanilla; blend well till smooth and creamy.
    3. Combine flours, baking pwdr and salt. Add in dry ingredients to wet and process, stopping to scrape down sides of bowl, or possibly mix well with wooden spoon. Dough will be stiff. Stir in oats and chocolate chips.
    4. Roll dough into balls about 1 1/2 inches in diameter and place about 2 inches apart on ungreased baking sheets. Flatten dough.
    5. Bake cookies for 10 to 12 min, till golden. Cold on baking racks.
    6. This recipe yields 4 dozen.
    7. Comments: Chocolate chips, peanut butter and oatmeal wow guests when combined in a cookie. With three favorite flavors rolled into one, these delectable treats are full of protein and appeal to the kid in all of us. The cookies will keep for a week in a tightly closed tin, or possibly they can be frzn for up to a month.
    8. Yield: 48 cookies
