  • Chocolate Chip Orange Cake

    The classic combination of oranges and chocolate come together in this spectacular Chocolate Chip Orange Cake that’s soaked in orange syrup, so it needs no frosting (making it easier to pack and transport to your picnic).

    Ingredients

    • Cake:
    • 3/4 cup butter softened
    • 3/4 cup sugar
    • 2 eggs
    • 1 Peel of 1 orange; grated
    • 2 cups all-purpose flour
    • 3/4 teaspoon baking soda
    • 3/4 teaspoon baking powder
    • 1 cup semisweet chocolate chips
    • 3/4 cup buttermilk
    • Syrup:
    • 3/4 cup fresh orange juice
    • 3/4 cup sugar

    Directions

    1. Preheat oven to 350 degrees. Spray 9-inch square cake pan with nonstick cooking spray.
    2. In a large bowl, cream butter and sugar at medium speed with an electric mixer until smooth. Add eggs and beat at medium speed until mixture is light and lemon-colored. Stir in grated orange peel.
    3. In a second large bowl, combine flour, baking soda and baking powder.
    4. In a small bowl, add 1 tablespoon flour to chocolate chips and mix well.
    5. Add flour mixture to the sugar and egg mixture alternately with the buttermilk; mix until a smooth batter forms.
    6. Fold in the chocolate chips and pour into prepared pan.
    7. Bake at 350 degrees for 30-40 minutes or until toothpick inserted into center comes out clean.
    8. Meanwhile, combine orange juice and sugar in a small saucepan. Stir and bring to a boil over medium-high heat. Stir until sugar is dissolved.
    9. Pour boiling hot glaze evenly over cake as soon as it is removed from the oven. Cool thoroughly in pan. Cut into 9 squares to serve.
