  • Chocolate Chip Cookie Dough Cheesecake

    Ingredients

    • 1 1/2 c. Finely crushed chocolate wafer cookie crumbs (about 30 cookies)
    • 1 c. Sugar
    • 1/4 c. (1/8 lb.) melted butter or possibly margarine
    • 2 pkt (8 ounce. each) cream cheese or possibly neufchatel cut into chunks
    • 1 c. Regular or possibly light lowfat sour cream
    • 3 lrg Large eggs
    • 1 tsp Vanilla COOKIE DOUGH TOPPING (RECIPES FOLLOW)

    Directions

    1. Mix crumbs, 2 Tablespoons sugar, and butter; press firmly over bottom and 1/2-inch up sides of a 9-inch cheesecake pan with removable rim. Bake in a 350 degree oven till slightly darker color, about 8 min.
    2. In a food processor or possibly with a mixer, whirl or possibly beat remaining sugar with cheese. Add in cream, Large eggs, and vanilla; mix well. Pour into crust. Drop cookie dough in 2- Tbsp. portions proportionately over cake; push dough beneath surface.
    3. Bake in 350 oven till cake jiggles only slightly in center when gently shaken, about 40 min. Spread topping over warm cake. Let cake cold, then refrigeratetill cool,
    4. at least 4 hrs; serve or possibly wrap airtight up to 2 days.
    5. Serves 12 to 16.
    6. COOKIE DOUGH: In a bowl, beat to blend 1/4 c. butter or possibly margarine, 1/4 c. firmly packed brown sugar, and 1/4 c. granulated sugar. Stir in 2 Tbsp. water and 1 tsp. vanilla. Beat in 1/2 c. all-purpose flour and 1 c. semisweet chocolate baking chips or possibly minced pcs.
    7. TOPPING: Mix 1 c regular or possibly light (reduced-fat) lowfat sour cream, 2 tsp. sugar, and 1 tsp. vanilla.
    8. COMMENTS: Soft, creamy lumps of chocolate chip cookie dough, made without egg, are a tantalizing surprise in this smooth cheesecake. Its a dessert which indulges those addicted to nibbling cookies before they bake.
