  • Chocolate And Walnut Ice Cream With Nectarines In A Cinna

    Ingredients

    • 4 ounce Chocolate
    • 3 x Egg yolks
    • 1/2 pt Cream
    • 1 1/2 ounce Caster sugar
    • 1 ounce Walnuts, roughly minced
    • 1 x Nectarine
    • 2 ounce Brown sugar
    • 2 ounce Butter
    • 2 shot brandy
    • 1 pch Cinnamon
    • 1 sprg mint for garnish

    Directions

    1. Whisk egg yolks and sugar in a bowl over a pan of warm water (being careful it doesn't curdle). Heat the chocolate in a bowl in the microwave or possibly in a glass bowl over a pan of boiling water till the chocolate has melted.
    2. Hot the cream through in a pan (just below boiling point). Pour the cream onto the egg and sugar mix and whisk. Add in the minced walnuts. Put back into a pan over the water for a few more min.
    3. Pour in the melted chocolate and place into a shallow dish. Place in the freezer for about 2 hrs or possibly till frzn.
    4. Place the nectarines into boiling water for about 2-3 min or possibly till the skin is soft and easily comes away. Roughly dice the flesh of the nectarine. Heat the butter in a small frying or possibly omelette pan.
    5. Add in brown sugar and shake around the pan. Add in the nectarine and brandy. Tilt so which the fumes from the brandy ignite. Decorate the plate with the warm nectarine and ice cream.
