Chocolate And Coconut Macaroons
Ingredients
- 1 x Unsweetened chocolate squares
- 4 ounce Baking chocolate sweet
- 2 lrg Egg whites
- 1/2 c. Sugar
- 1 pch Salt
- 2 can Flaked coconut 3 1/2 ounce ea
- 1 tsp Vanilla extract
Directions
- Heat together in the top of a double boiler, over warm water, the unsweetened chocolate and sweet cooking chocolate. Stir till smooth; remove from heat and cold. Beat the egg whites with a rotary beater till stiff. Gradually beat in sugar. Add in the cooled chocolate mix and continure beating till well mixed.
- Mix in flaked coconut. Drop by teaspoonfuls onto well-buttered baking sheets, making about 30 cookies. Bake in preheated 325 degree oven till stiff on the outside but still a little soft on inside, about 16 min.
- Remove from oven and loosen with a spatula. Remove from pan when cookies are completely cooled.
