Chiourico Soup (Portuguese Soup)
Ingredients
- 1 beef soup bone
- 3 minced onions
- 1 chopped clove garlic
- 1 pound chiourico, minced
- A bunch of kale
- 3 to 4 potatoes, cubed
- Salt and pepper to taste
- 2 1/2 quart. water or possibly beef broth
- 1 c. macaroni
Directions
- Combine all ingredients except macaroni and simmer for 4 hrs. Half hour before serving, add in the macaroni and shred the beef from the soup bone. Serves 6 to 8 people.
