  • Chinese Pepper Steak

    Ingredients

    • 20 lbs beef strips
    • 1 cup oil
    • 2 gals red and green peppers, large dice
    • 1/2 gal onions
    • 1 cup minced fresh ginger root
    • 1 Tbsp black pepper
    • 1 qt celery, diagonal slice
    • 1/2 cup minced garlic
    • 1 cup cornstarch
    • 3 cups soy sauce
    • 2 cups water
    • 1 cup cooking sherry

    Directions

    1. Heat oil to HOT. Saute beef strips with onions until beef is browned.
    2. Season with pepper.
    3. Add celery and cook for a few minutes to wilt.
    4. Add peppers and ginger.
    5. Make a slurry of cornstarch, sherry, and soy sauce and add to the beef to create a sauce.
    6. Add the garlic and cook until the sauce has thickened.
