Chinese Pepper Steak
Ingredients
- 20 lbs beef strips
- 1 cup oil
- 2 gals red and green peppers, large dice
- 1/2 gal onions
- 1 cup minced fresh ginger root
- 1 Tbsp black pepper
- 1 qt celery, diagonal slice
- 1/2 cup minced garlic
- 1 cup cornstarch
- 3 cups soy sauce
- 2 cups water
- 1 cup cooking sherry
Directions
- Heat oil to HOT. Saute beef strips with onions until beef is browned.
- Season with pepper.
- Add celery and cook for a few minutes to wilt.
- Add peppers and ginger.
- Make a slurry of cornstarch, sherry, and soy sauce and add to the beef to create a sauce.
- Add the garlic and cook until the sauce has thickened.
