  • Chinese: Oriental Pistachio Chicken

    Ingredients

    • 8 x Servings
    • 8 x Chicken breasts, halved, boned and skinned
    • 1 tsp Garlic pwdr
    • 1 tsp Paprika Salt and freshly grnd, black pepper to tast
    • 3 Tbsp. Safflower oil
    • 2 c. Beef broth
    • 2 tsp Cornstarch
    • 1/3 c. Dry red wine
    • 2 Tbsp. Oyster sauce
    • 4 x Green onions, including minced
    • 1/4 c. Pistachio nuts, shelled Chinese rice noodles Pistachio nuts, (optional)

    Directions

    1. Season chicken breasts with garlic pwdr, paprika, salt and pepper. Saute/fry
    2. chicken in oil over medium-high heat. In saucepan, combine beef broth, cornstarch, wine and oyster sauce. Heat to boiling and simmer for 10 min. Add in green onions and 1/4 c. pistachios. Prepare rice noodles according to package directions. Place noodles on heated serving dish, top
    3. with chicken breasts and pour sauce over all. Garnish with additional pistachios.
