Chinese Noodles & Tuna Salad

Ingredients

  • 7 ounce. can tuna, liquid removed
  • 1/2 c. finely minced green onions
  • 3 tbsp. finely minced green peppers
  • 3 tbsp. minced ripe olives
  • 3 tbsp. minced pimento
  • 1/2 c. mayonnaise
  • 1 teaspoon lemon juice
  • 1 tbsp. light cream
  • 3 ounce. can Chinese noodles
  • Lettuce
  • Deviled Large eggs (opt.)
  • Pickled beets (opt.)

Directions

  1. Combine the first 5 ingredients. Blend mayonnaise, lemon juice and cream. Pour over tuna and mix. Chill. Add in noodles and mix just before serving. Serve on lettuce on individual salad plates and garnish with deviled Large eggs and pickles beets. Noodles must be added at last minute so they will stay crisp. Serves 6.
