Chinese Chicken Salad (Weight Watchers Magazi
Ingredients
- 1 Tbsp. Rice wine vinegar
- 1 tsp Canola oil
- 1 tsp Sesame oil
- 1 Tbsp. Toasted sesame seeds
- 1/2 tsp Grnd ginger
- 3 c. Torn romaine lettuce
- 3 c. Shredded red cabbage
- 1 c. Liquid removed canned sliced water, chestnuts
- 8 ounce Cooked skinless boneless, chicken breast, cut
- 1 ounce Sliced almonds Lemon juice
Directions
- 1. In small bowl, combine vinegar, canola and sesame oil with 1 Tablespoons water; whisk in sesame seeds and ginger; set aside.
- 2. Divide lettuce, cabbage and water chestnuts proportionately among 4 plates.
- Top each proportionately with chicken; sprinkle proportionately with almonds. Drizzle dressing over salad. Sprinkle with lemon juice.
