  • Chinese Chicken Salad

    This wonderful spring salad has become a staple for my family at every family event; from Thanksgiving and Christmas to graduation parties and weddings. It can feed a crowd or can be down sized to fit your family.

    Ingredients

    • 1 medium head of cabbage, shredded
    • 1 bunch of green onions
    • 2-4 chicken breasts, cubed and cooked
    • 1 cup of slivered almonds, toasted
    • 2-4 packages of chicken flavored ramen noodles, well crushed
    • 4 tablespoons of seasme seeds
    • Dressing-
    • 2-4 packages of ramen chicken seasoning (to taste)
    • 4 tbs sugar
    • 1-1 1/2 cups oil
    • 4-6 tbs rice vinegar
    • dash of pepper

    Directions

    1. combine all ingredients and toss well, add dressing about an hour prior to serving, allowing time for the flavors to combine. Cooking the chicken on the BBQ is quick and tastes great. I also marinate my chicken in some oil, soy sauce, and a crushed garlic clove.
