    Funny sounding name - but before you run off without trying this great chili recipe...what else could I call it with the addition of delicious, quartered artichokes that provide just the right bit of tangy flavor? Oh and something else you don't typically find in chili - potato! Trust me, this chili recipe is delish!

    Ingredients

    • 2 teaspoons extra virgin olive oil
    • 1/2 cup red onion, chopped
    • 2 (15 oz.) cans red kidney beans, drained and rinsed
    • 1 (15 oz.) can black beans, drained and rinsed
    • 1 (15 oz.) can diced tomatoes
    • 1 (15 oz.) can artichoke hearts, quartered
    • 1 (4.5 oz.) can chopped green chilis
    • 1 large red potato, diced, not peeled
    • 1 medium green bell pepper, diced
    • 3 cloves garlic, minced
    • 2 1/2 teaspoons ground cumin
    • 2 1/2 teaspoons dried oregano
    • 1 1/2 teaspoons dried cilantro
    • generous pinch of cayenne pepper
    • pinch of white ground pepper
    • 2 to 3 cups low sodium vegetable broth
    • juice from 1 fresh lime
    • 6 green onions, sliced for garnish

    Directions

    1. Heat the olive oil in a large stock pot or Dutch oven
    2. over medium heat. Add the garlic and onion and cook
    3. until onion is tender (about 5 minutes).
    4. Add the green chilis and green bell pepper and cook
    5. for another 5 minutes.
    6. Add the beans, artichoke hearts and dried seasonings,
    7. stir well and add the vegetable broth. Squeeze in the
    8. lime juice. Bring to a boil.
    9. Reduce heat, add the diced tomatoes and simmer for about
    10. 15 minutes.
    11. Ladle into serving bowls and garnish with the sliced green
    12. onion. You might also like a few tortilla chips crumbled
    13. on top, before you add the green onion.
