  • Chili made my way

    This chili has a little bit of spice to it. I searched and searched and couldn't find a recipe that I liked so I took my top three and made my own. My husband loves it, his dad thinks it is too spicy but heck on a cold winter's day it really warms the body up.

    Ingredients

    • 3 tbsp olive oil
    • 1 med onion chopped finely
    • 6 cloves of garlic
    • 3 tbsp chili powder
    • 2 tsp ground cumin
    • 3 tbsp flour
    • 1 tbsp oregano
    • 1 tbsp parsley
    • 1 tbsp paprika
    • 1 tsp salt
    • 3 beef bullion cubes
    • 1/4 tsp black pepper
    • 1 tsp basil
    • 1 tsp thyme
    • 1/4 ground red pepper
    • 1 1/2 lbs ground beef
    • 2 cans Ranch Style Beans (kidney beans)
    • 1 can Rotel tomatoes or diced tomatoes
    • 4 cans tomato sauce
    • equal amount of water

    Directions

    1. Brown ground beef ( I use ground round it has less fat) Drain excess grease/fat
    2. set aside
    3. in a stew pot combine everything except meat and beans
    4. stir until all the seasoning is dissolved
    5. add beans and meat
    6. cook on med heat for about 30- 45 minutes or until sauce looks thickened.
    7. Tip: you can use any kind of meat. I have used ground round, ground deer meat and left over roast and left over brisket it all came out great when I was in a pinch and needed a healthy fast meal for my growing boys and husband of course.
    8. I put my onion, garlic and Rotel tomatoes with chili's in my food processor to chop them up.
