Ingredients

  • 10 x Large eggs, beaten
  • 1/2 c. all-purpose flour
  • 1 tsp baking pwdr
  • 16 ounce cottage cheese
  • 1 c. Montereyjack cheese, shredded
  • 1 c. cheddar cheese, shredded
  • 1/2 c. butter, melted
  • 1 can diced green chilies, (7 1/2-oz) liquid removed

Directions

  1. Preheat oven to 350 F. In a large bowl, combine all of the ingredients, except the chilies, and mix together well. Stir in the chilies.
  2. Pour the mix into a well-sprayed 9 x 13-inch baking pan and bake for 35 to 40 min, or possibly till the top is lightly browned and the center is hard. Remove and let stand for 5 min. Serve.
  3. YIELD: 8 SERVINGS
