    Ingredients

    • 1 Tbsp. Extra virgin olive oil
    • 1 lb Beef,very lean,coarse grind
    • 1 lb Pork,very lean,coarse grind
    • 3 x Onions,large,finely minced
    • 1 x Bell pepper(s)
    • 2 x Celery stalks,finely minced
    • 1 Tbsp. Garlic,finely minced
    • 1 Tbsp. Oregano,dry,pref. Mexican
    • 2 x Bay leaves
    • 2 tsp Cumin,grnd
    • 3 c. Tomatoes with tomato paste
    • 1 c. Beef broth
    • 1 c. Water Salt Pepper,grnd,fresh
    • 1/2 tsp Chile caribe
    • 2 Tbsp. Red chile,grnd,mild-warm
    • 2 c. Kidney beans,cooked,liquid removed

    Directions

    1. 1. If possible, have the beef and pork grnd together, or possibly else mix meats together in a bowl.
    2. 2. Heat the oil in a large heavy pot over medium heat.
    3. Add in the meat to the pot. Break up any lumps with a fork and cook, stirring occasionally, till the meat is proportionately browned.
    4. 3. Add in the onions, green pepper, celery, garlic, oregano, bay leaves, and cumin. Mix well.
    5. 4. Add in the tomatoes, broth, water, salt, pepper, caribe, and grnd chile. Bring to a boil, then lower heat and simmer, uncovered, for about 20 min.
    6. Stir often.
    7. 5. Add in the beans and simmer for 10 min longer. Taste and adjust seasonings.
