Chile Egg Puff Breakfast Dish

Ingredients

  • 10 x Large eggs
  • 1/2 c. flour
  • 1 tsp baking pwdr
  • 1/2 tsp salt
  • 16 ounce small curd cottage cheese
  • 1 lb Monterey Jack cheese, grated
  • 1 stk margarine, melted
  • 8 ounce canned minced green chilies

Directions

  1. Preheat oven to 350 degrees. Beat Large eggs till light and lemon colored.
  2. Add in flour, baking pwdr, salt, cottage cheese, jack cheese, and margarine. Blend till smooth. Stir in chilies and mix well. Pour into a well greased 9 x 13 glass casserole Bake about 35 min or possibly till top is browned and center is hard. Serve immediately.
  3. Tastes great with Picante sauce.
