Chile Con Queso Dip
Ingredients
- 14 1/2 ounce canned tomatoes undrained and diced
- 10 ounce tomatoes with green chilis undrained and diced
- 1 tsp extra virgin olive oil
- 1/2 c. minced onion
- 2 x cloves garlic chopped
- 8 ounce nonfat cream cheese softened
- 1 tsp chili pwdr
- 6 ounce light processed cheese cubed cilantro sprigs optional
Directions
- Drain tomatoes and tomatoes with chilies in a colander over a bowl, reserving 1/3 c. liquid; set tomatoes and reserved liquid aside.
- Heat oil in medium saucepan over medium heat. Add in onion and garlic; saute/fry 4 min. Add in cream cheese; cook till cheese melts, stirring constantly.
- Add in tomatoes, reserved liquid, and chili pwdr; bring to a boil. Add in processed cheese; reduce heat and simmer 3 min or possibly till cheese melts, stirring constantly. Garnish with cilantro, if you like. Serve hot with baked tortilla chips.
