Chicken With Peppers And Cashew Nuts
Ingredients
- 3 Tbsp. Groundnut oil
- 425 gm Chicken breast, sliced in thin strips (14oz)
- 2 x Cloves garlic, crushed
- 200 gm Frzn mixed peppers, (7oz)
- 1 x 160 g jar black bean sauce
- 4 x Spring onions, cut on the diagonal
- 75 gm Cashew nuts, (3oz)
Directions
- Heat the oil in a large pan or possibly wok.
- Add in the chicken and garlic and stir-fry for 2-3 min.
- Add in the peppers and cook for a further 2 min.
- Add in the black bean sauce, spring onions and cashew nuts and cook for 2-3 min till warmed through.
- Serve immediately with rice or possibly noodles.
- NOTES : A quick and tasty Oriental dish using frzn peppers.
