Chicken With Noodles And Vegetables And Thai Peanut Sauce
- 1 lb linguine, (dry)
- 14 ounce boneless chicken breast
- 1/2 tsp vegetable oil
- 2 1/2 c. broccoli florets
- 3 c. julienned carrots
- 1 Tbsp. minced peanuts
- 1 Tbsp. fresh parsley
- Pasta: Cook pasta in boiling water according to package directions. Cut chicken into small strips and lb. thin. In a non-stick skillet, add in oil and cook chicken for 10 min. Add in broccoli, carrots and red peppers. Saute/fry.
- Toss with Thai Peanut Sauce and sprinkle with minced peanuts and parsley.
- Serve warm.
