Chicken With Apples
Ingredients
- 6 x Chicken breasts, boned and skinned
- 1 1/2 c. Finely diced apples
- 1/4 c. Golden brown raisins
- 1/4 c. Walnuts
- 3 Tbsp. Chopped onion
- 1/2 tsp Sage
- 1/4 c. Orange juice, from frzn concentrate
- 1/4 c. Butter
- 1/3 c. Apple jelly
- 1/4 c. Dry sherry
Directions
- Lb. breasts to 1/4 inch. Mix together apples, raisins, walnuts, onion and sage. Put equal portions of stuffing on each breast and roll, securing with toothpicks if necessary. Place breasts in oven-proof baking dish.
- In small saucepan, combine ingredients for glaze. Cook over low heat till blended. Pour glaze over breasts. Bake uncovered at 350 for 45 min.
- Brush with glaze frequently.
