  • Chicken With Apple Curry Stuffing

    Ingredients

    • 1 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Butter
    • 1/4 c. Minced onion
    • 2 Tbsp. Minced celery
    • 1 1/2 c. Peeled/minced Granny Smith apples
    • 1 tsp Curry pwdr
    • 1/4 c. Golden brown raisins
    • 4 x Skinless/boneless chicken breasts
    • 1 c. All-purpose flour
    • 1 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Butter
    • 3/4 tsp Curry pwdr
    • 2/3 c. Chicken stock
    • 3/4 c. Apple juice
    • 1 tsp Chopped garlic Salt and pepper

    Directions

    1. Directions: Heat the 1 Tablespoons extra virgin olive oil and 1 Tablespoons butter in a large saute/fry pan. Add in the onion and celery and saute/fry till tender, about 5 min. Add in the garlic, apples, curry pwdr, and raisins. Cook for about 3 min to blend flavors. Slice a pocket into each chicken breast and stuff about 1 Tbsp. of the filling into each pocket.
    2. Flour each chicken breast on both sides. Heat the 1 Tablespoons extra virgin olive oil and 1 Tablespoons butter in another saute/fry pan and cook the stuffed chicken breasts on both sides till cooked through. Remove chicken. In the same pan, add in the curry pwdr, chicken stock, apple juice and chopped garlic.
    3. Whisk to combine and cook for 4-5 min till slightly thickened.
    4. Serve over chicken breasts.
