  • Chicken Teriyaki And Rice

    Ingredients

    • 1 lb Boneless chicken breasts, skinless
    • 1/4 c. Soy sauce
    • 2 Tbsp. Dry sherry
    • 1 Tbsp. Brown sugar
    • 2 tsp Garlic pwdr
    • 1 tsp Ginger
    • 1 1/2 c. Fat free chicken broth
    • 6 x Green onions, minced
    • 1 sm Red pepper, sliced
    • 1 c. Minced broccoli
    • 1 c. Fat free chicken broth
    • 1 1/2 Tbsp. Cornstarch
    • 4 c. Cooked white rice

    Directions

    1. 8% Fat
    2. 1. Cut chicken into one inch strips.
    3. 2. In WOK on high heat, combine soy sauce, sherry, brown sugar and seasonings. Add in chicken and cook for 10 min stirring occasionally.
    4. 3. Reduce heat to low, add in 1/2 c. broth and all vegetables. Simmer for 10 min or possibly till vegetables are tender crisp.
    5. 4. Blend remaining broth and cornstarch in blender on high for 1 minute or possibly till smooth.
    6. 5. Return heat to high, slowly pour cornstarch mix into chicken mix. Stirring constantly, bring to boil for 1 minute.
    7. 6. Serve over rice.
    8. Makes 4 servings;
