Chicken Teriyaki And Rice
Ingredients
- 1 lb Boneless chicken breasts, skinless
- 1/4 c. Soy sauce
- 2 Tbsp. Dry sherry
- 1 Tbsp. Brown sugar
- 2 tsp Garlic pwdr
- 1 tsp Ginger
- 1 1/2 c. Fat free chicken broth
- 6 x Green onions, minced
- 1 sm Red pepper, sliced
- 1 c. Minced broccoli
- 1 c. Fat free chicken broth
- 1 1/2 Tbsp. Cornstarch
- 4 c. Cooked white rice
Directions
- 8% Fat
- 1. Cut chicken into one inch strips.
- 2. In WOK on high heat, combine soy sauce, sherry, brown sugar and seasonings. Add in chicken and cook for 10 min stirring occasionally.
- 3. Reduce heat to low, add in 1/2 c. broth and all vegetables. Simmer for 10 min or possibly till vegetables are tender crisp.
- 4. Blend remaining broth and cornstarch in blender on high for 1 minute or possibly till smooth.
- 5. Return heat to high, slowly pour cornstarch mix into chicken mix. Stirring constantly, bring to boil for 1 minute.
- 6. Serve over rice.
