  • Chicken Taco Feast

    Mexican food is a favorite at any time around our home. Here is one that I tried a few years back and it still is hanging on and for good reason. I also have included my favorite simple salsa recipe. Enjoy. Chef Dave

    Ingredients

    • Chicken Taco:
    • • 2 cups shredded poached chicken
    • • 1 teaspoon taco seasoning
    • • salt and pepper to taste
    • • shredded lettuce
    • • 1 tomato, chopped
    • • 4 green onions, sliced
    • • 1 (4 ounce) can sliced black olives
    • • 1 avocado - peeled, pitted and diced (optional)
    • • 1 cup shredded cheddar cheese
    • • 8 (6 inch) corn tortillas taco shells
    • • or fresh (7 inch) flour tortillas
    • Chef Dave's Simple Salsa
    • • Pinch of oregano
    • • Pinch of sugar
    • • 1 clove garlic, minced
    • • 1 cup (8oz) canned diced tomatoes
    • • ¼ Pod (3 slices) jalapeno pepper, minced
    • • 1/8 cup onion, diced
    • • ½ cup fresh cilantro (wansoy), loose packed
    • • 1 teaspoon fresh lemon or lime juice
    • • Salt and pepper to taste

    Directions

    1. Chicken Tacos:
    2. 1. Toss chicken with taco seasoning, salt and pepper. Cover bowl with plastic wrap. Before servng heat chicken if needed in skillet (mirowave will work also) until chicken is heated through, about 2 to 3 minutes. Don’t over NUKE IT.
    3. 2. Warm the tortillas in a skillet for about a minute on each side to make them pliable. If using hard shells warm in a oven for a few minutes before serving.
    4. 3. Serve the simply salsa or creamy salsa or both, lettuce, tomato, onion, olives, avocado, and shredded cheese in separate bowls. Serve the shells or tortillas on a platter covered with a dry warm towel that has been heated in the microwave. These are DIY style Taco.

    6. 1. Combine add ingredients in a blender or food processor. Pulse until the
    7. salsa is to your desired consistency.
    8. 2. Refrigerator until needed.
    9. Variations: Chef Dave’s Special Creamy Salsa
    10. ½ cup Dave’s Simply Salsa
    11. 2 tablespoons ranch dressing
    12. 1/8 sour cream
    13. ½ teaspoon taco seasoning
    14. Combine well. Chill until needed.
