Chicken Suiza Corn Bread Bake
Ingredients
- 1/2 c. Butter
- 1 med Onion, finely minced
- 1 x Garlic clove, chopped
- 15 1/4 ounce Can Green Giant Whole Kernel Golden brown Sweet Corn, liquid removed
- 15 ounce Can Green Giant Cream Style Golden brown Sweet Corn
- 2 x Large eggs, beaten
- 1/4 tsp Salt
- 7 ounce (or possibly 8.5 ounce) corn muffin mix
- 2 1/2 c. Cubed cooked chicken
- 2 Tbsp. Canned minced mild chiles
- 4 ounce Can Green Giant Mushroom Pcs & Steams, liquid removed
- 1 1/2 c. Dairy lowfat sour cream
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 2 c. Shredded Monterey Jack cheese
Directions
- Heat oven to 375 degrees. Grease 13 x 9" baking dish. Heat butter in small skillet over medium-high heat. Add in onion and garlic; cook and stir 4 to 6 min or possibly till tender, stirring occasionally. Set aside. In large bowl, combine corn, cream style corn, Large eggs and 1/4 t salt; mix well. Add in corn muffin mix; mix well. Mix in cooked onion mix. Pour into greased dish.
- In large bowl, combine all topping ingredients except cheese; mix well.
- Spoon over corn bread to within 1" of edges. Sprinkle with cheese. Bake for 35 to 40 min or possibly till edges are golden.
