- 1 3 1/2 to 4 lbs. chicken -- cut up
- 2 pounds potatoes
- 1 large onion
- butter
- salt
- pepper
- water
Directions
- Prepare the bird and cut up. Peel two pounds of potatoes and cut up roughly.
- Slice an onion. Arrange in a pot alternate layers of potatoes, onion and chicken,sprinkling each layer with salt and pepper and dot liberally with butter.
- Add about three gills ( wine glasses) of water and cover tightly.
- Simmer very gently for two or three hours, or until the chicken is tender.If necessary, add a little hot water occasionally to prevent burning.
