  • Chicken Skewers With Sesame Dipping Sauce

    Ingredients

    • 4 x chicken, breast, fillets
    • 1/4 c. Japanese soy sauce
    • 1 1/2 tsp mirin
    • 2 tsp cooking sake
    • 2 tsp fine sugar bamboo skewers, soaked in water for 30 min Sesame Sauce
    • 1 1/2 c. sesame seeds
    • 2 Tbsp. mirin
    • 1/4 c. soy sauce
    • 3 tsp sugar
    • 1/3 c. chicken stock

    Directions

    1. Slice the chicken and put it in a bowl. Add in the soy sauce, mirin, sugar and sake to marinate the chicken for at least 3 hrs. Set aside in the fridge.
    2. When you are ready to serve, drain the chicken but keep the marinade. Thread the chicken pcs onto the soaked bamboo skewers and place them on the grill for a couple of min each side, brushing with the marinade all the while.
    3. Serve with the sesame dipping sauce.
    4. Sesame Sauce:For the dipping sauce, heat a non-stick pan and add in the sesame seeds, shaking them over the heat till they turn a golden colour. Put them in a pestle with the mirin and grind them to create a paste. Stir in the soy sauce, the sugar and the cool chicken stock.
    5. Preparation time is 30 min, marinating time 3 hrs.
