  • Chicken, Sausage and Peppers

    Ingredients

    • 4 T olive oil, more if needed
    • 1 large onion, sliced
    • 1 green pepper, sliced
    • 1 red pepper, sliced
    • 4 sausages (garlic)
    • 1 chicken, cut up
    • 1 can diced tomatoes with basil
    • 1 can tomato puree

    I made a similar recipe to this one, a while back, from a recipe by Nigella Lawrence, I believe. It was really good, so I was open to making this one from the Unconfidential Cook. I like that blog. Stop by and see if you don't find some recipes also.

    Chicken, Sausage and Peppers

    Saute all the vegetables until just soft, and remove from pan.

    Brown the sausages and the chicken

    Dump the vegetables back in the pan, throw in the tomatoes, cover and simmer until the chicken and sausage is just cooked.

    You can do it that way or you can use a cast iron pan and take the kit and caboodle and put it in a 400 degree oven for thirty minutes. Have I told you just how much I love those cast iron pans?
