  • Chicken Sate' With Peanut Butter Sauce

    Ingredients

    • Serve 4
    • 3 Tbsp. soy sauce
    • 2 Tbsp. lemon juice
    • 1/4 tsp curry pwdr (or possibly to taste)
    • 63/1000 tsp pepper
    • 1 clv garlic
    • 1 lb boned, skinned chicken breasts
    • 2 Tbsp. corn oil
    • 1 tsp corn oil
    • 1/4 c. minced onion
    • 1/2 tsp ginger root, chopped
    • 1/2 c. peanut butter
    • 1 c. water
    • 1 Tbsp. soy sauce

    Directions

    1. In small bowl, stir together soy sauce, lemon juice, curry pwdr, pepper and garlic Cut chicken in 1" cubes Add in chicken to marinade and toss to coat Marinate 30 min, stirring occasionally Rinse bamboo skewers in water Thread with chicken pcs and brush with oil Broil 6" from heat about 5 min, till tender, turning occasionally Serve with Peanut Sauce
    2. Peanut Sauce:In 1 qt saucepan, heat oil over medium heat Add in onion, ginger and pepper. Cook, stirring frequently, 1 minute Stir in peanut butter Gradually stir in water and soy sauce till well blended Bring to boil, stirring constantly till sauce thickens Serve warm or possibly room temperature
